Who Is Nick Holloway?
Nick had a humble journey to culinary stardom. While studying Engineering at Melbourne University, he found himself drawn to the electric energy of the hospitality industry, earning a living by washing dishes. It was during this time that he discovered his true calling, setting him on a path towards mastering the art of cooking.
Inspired by renowned chef Geoff Lindsay’s captivating speech at a chef’s symposium, Nick’s passion for cooking ignited. He embarked on his apprenticeship at Stella, honing his skills and fuelling his creative fire.
His culinary journey took him to the esteemed Blake’s under the guidance of Andrew Blake, before reuniting with Geoff to co-create the acclaimed Pearl Restaurant in Richmond. Four transformative years at Pearl laid the foundation for Nick’s culinary prowess, and set the stage for his next adventure.
In 2004, Nick embraced a life-changing opportunity and embarked on a journey to Cairns, armed with a one-way ticket. It was here that the story of Nu Nu Restaurant began, captivating diners with its tropical-inspired dishes and a true taste of paradise.
