Vegan Tofu Lasagna

Since I don’t eat dairy, I swap regular ricotta in my lasagna recipe for homemade tofu ricotta. Just add tofu to a food processor, and a pinch of garlic powder, a dash of sea salt, and some basil, then puree until smooth and creamy. Sometimes I add spinach and Trader Joe’s vegan pesto for added flavor. This dairy-free version has totally fooled my lasagna-loving family and friends!
